Hi! I'm from Sweden and will with two friends visit your beloved country this fall. We will start the vacation by living in New York for two months. The remaining 3.5 weeks we're planning a road trip from New York through Dallas where my grandpa lives and then on to San Francisco where we will meet my cousin. We want to stay about 2-3 days both in Dallas and in SF.
It's very doable. NYC to Dallas is a 3 day drive via Interstate highways without sightseeing, and Dallas to SF is also 3 days. With your time in Dallas and SF, this leaves you almost 2 weeks for diversions. There are literally millions of things to see on a cross country trip - what you should do is get a large wall map of the US and start looking at points of interest.
3.5 weeks is certainly enough time to drive coast to coast, with a detour to Dallas, and have time left over for those cities and see quite a few other things along the way. It will, however, be expensive, as one way car rentals typically include a drop fee of at least a few hundred dollars for a one way trip. There's also additional fees for multiple drivers, and if you are under 25.

What I'd suggest that you do is look at the basic route dictated by your plan to stop in Dallas for a couple of days and plan your trip around a few of the major tourist attractions that should be a part of any such first trip. These would include Washington DC, the Blue Ridge Parkway, Smoky Mountain National Park, Petrified Forest National Park, the Grand Canyon, Death Valley, and Yosemite National Park. Then use the Map Center to see what else is within striking distance of that route. A couple of things that might not be in that data base but that you might want to consider are a stop in Wilmington DE (formerly Christina, the capital of New Sweden) to see the Kalmar Nyckel and Old Swedes Church , and Cadillac Ranch outside Amarillo TX.
