This position will report holland america cruise ship petersburg directly to the Director, Fleet Culinary Operations. The Manager Corporate Chef Menu Product Development is responsible for departments day to day operation; this includes the recipe management (update and maintain data base, administration, costing and distribution); the creation, update holland america cruise ship petersburg and maintenance of all culinary operations Standard Operational Procedures (SOP); the scheduling and hiring of culinary management in cooperation with the Traveling Corp. Exec. Chef and traveling culinary team; understanding and following all culinary specifications, procedures and activities established by Royal Caribbean International relating to food preparation and menu development onboard the ships and outer island facilities.
Works with the Director, Fleet Culinary Operations on specific culinary taskforce assignments. Participates and supports the Royal Caribbean Culinary / F B Department in all initiatives to achieve Culinary Excellence and Quality Assurance.
In collaboration with operational stakeholders, develops recipes and innovative concepts and menus that meet departmental goals in food safety, food allergen safety, wellness of our guest and crew, food sustainability, ethnic diversity, holland america cruise ship petersburg seasonality and fiscal responsibility.

Provides Executive Chefs, in cooperation with the Corp. Exec. Chef, with menus and recipes, and coordinates training of culinary staff in the execution of new menu cycles, dishes and techniques. Assists with new product specification development. Conducts inspection of all aspects of food preparation on ships, including yield and butcher tests for assessing compliance to established corporate standards.
Manages the Fleet Culinary management Schedule and potential staffing needs.
