Three miles past Carmel "at the greatest meeting of land and sea," the Hyatt Carmel Highlands (formerly Highlands Inn) awaited our arrival. Ascending up the steep hill to the resort, the great blue Pacific came into view and all worries melted away. Boasting not only five-star views, but five-star service as well – the Hyatt Carmel Highlands delivered the ultimate weekend of relationship rejuvenation.
Recommended Resort:   Hyatt Carmel Highlands. With 48 guestrooms, including 11 suites, 32 Ocean View King rooms, and five Garden View rooms; in-room spa services; hotels in london england private yoga classes; an outdoor heated swimming pool; and three outdoor garden spas, the hotel has something for everyone. On our stay, we opted for a one-bedroom Ocean View room, which came complete with a wood-burning fireplace, full kitchen, extra-large marble spa tub and king-sized hotels in london england Hyatt Grand Bed™, among other luxurious amenities. Watching the sun set and waves crash from our spacious patio – glass of wine in hand – definitely set the romantic tone for the getaway.

Also available (for a cost) are picnic baskets prepared by the hotel chefs – complete with caviar, wine, artisan cheeses and more. Snacks in tow, we were off. The window table, where we were immediately seated, was literally perched on the Pacific's edge and provided panoramic views of the dramatic Big Sur coastline. But the view was only the beginning. It was the top-notch service and innovative California-coastal cuisine that really had us "oohing" and "aahing." After savoring the Monterey Bay Abalone, Striped Bass, Kansas City Steak (16 oz. cast iron seared) and Crème Brule, our taste buds, stomachs and souls quickly became filled to the brim with bliss. Also worth mentioning is the extensive wine menu, which features 61 pages of French Champagnes; sparkling wines; and whites and reds from every notable hotels in london england wine region in the world. Needless to say, our dinner at Pacific's Edge was an experience we'll be reminiscing about for years to come.
